The Moosewood Cookbook. {56}


For Christmas, Cranny got me two vegetarian cookbooks- one of which looked straight out of 1975, which is totally a turn on for me. Anything that people don't love, like ugly brown couches or oxford shoes, I try to love when no one else will. I think I am a reincarnated 1960's hitchhiker who barely bathed and wore leather in my past.

So anyways, The Moosewood Cookbook. All the pictures are cartoony and the recipes are hand written. But they are so delicious! Tonight I made spinach rice casserole, which was easy, cheap and husband approved (again!). It was surprisingly filling, especially paired with sweet potato fries and peas. I think next on the list is eggplant stuffed with a Greek Pilaf. Cranny, I am forever grateful for your excursion to find this cookbook for me

Also- side note- my Aunt Dee had emergency surgery yesterday and I was really unsure if she was going to make it or not. She had an infection that was spreading really fast but luckily they cleaned out her insides and she is going to be okay. People, always tell the ones you care about that you love them. Close calls really put everything into perspective.
